Beet and Lentil Vegan Burgers

Beets are fully loaded with health benefits and they are sweet, too. They are rich in silicone (integrity of nails, heat and skin - collagen) and folic acid (healthy red blood cells), therefore great to the female reproductive system. Beets are lit for those experiencing constipation. Beets can be eaten raw or cooked. Chew well if you are eating beets raw. As the saying goes: “drink your food and eat your drink” - think about that - especially during your meals! Back to their benefits: beets cleanse the blood a.k.a. the red color. Beets nourish the liver and improve eyesight. Beets help with anemia, stamina and energy. I can go on and on… Bring beets into your kitchen!

vegan high protein

2 medium beets - 2 cups shredded
1 cup nuts or seeds - example: walnuts or pumpkin or sunflower seeds
1/2 cup rolled oats
1/4 cup ground flax seeds
2 cloves garlic
1 tsp rosemary
1/2 tsp thyme
1/4 tsp cinnimon
1/4 tsp cayenne
1/2 tsp sea salt
1 cup beans or lentils - rinse and drain if using canned
1 tbsp tamari or soy sauce

-preheat oven to 375 degrees and place parchment paper on baking sheet
-finely grate beets and set aside
-using food processor with s-blade attachment add: nuts or seeds, oats, flax, garlic, spices, salt. A coarse flour will form. You might have to scrap the sides to mix well
-add in the shredded beets, beans or lentils, and tamari to the processor and blend until combined. Again, scrape sides to mix better. Pour out of bowl and continue mixing with your hands or a large spoon. Some pieces of the ingredients will remain larger and that’s okay, it will add texture to the burgers.
-dampen hands and scoop out 1/2 cup of burger badder and form patties. You’ll get 6-7 burgers. Place them on the baking sheet.
-bake in the oven for 20 minutes, then flip burgers over and bake for another 15-20 minutes. You want the edges to be crispy and browned. The top rack on the oven gets hotter - for the last 15-20 minutes place on top rack for the crispy effect.

Genia’s Spoon Me Tips: Garnish with avocado, or avocado aioli, bbq sauce, tomatoes, cucumber and wrap in a few romaine lettuce leaves. Bread be gone! Go with the complex carbs from veggies. Feel lighter, healthier, digest and rest, and energized!

Genia’s Spoon me tip: If you are purchasing organic keep the peel on and scrub them clean - I use my tawashi - metal sponge. Otherwise peel your beets. You might want to wear gloves as the red natural color of the beets can make your hands and everything around the beets red. Just saying…
