Chocolate Hemp Heart Cookies
As particular as I am about my meals and their ingredients, I am just as watchful with my desserts (for the most part, lol ). When I decided to make a sweet treat for Tasty Tuesday I dug deep into my recipe goodie stash, but nothing tickled my fancy. I texted my sister in Ottawa, remembering she made these Hemp Cookies awhile back, and the stellar ingredients, and gorgeousness inside and out stuck in my mind. Prompto, she sent the recipe over. We take our recipes seriously, with a grain of salt! Thanks Merle!
These cookies are allergy friendly. They are gluten free, nut free, eggless, and dairy free.. Pretty cool for a delicious cookie recipe. HEMP SEEDS gives these cookies a nutty flavor. What a treat, especially for those sensitive to nuts.
Genia’s Spoon Me Tips
Hemp seeds are my go to for a quick and simple plant protein. They have a nutty flavor (nut free) and creamy texture. I love them in my yogurt, shakes, and salads. Three tablespoons of Hemp = ten grams of protein. Yup, these tiny seeds are gold!
Hemp Heart Trivia
- Hemp Hearts are soft inner parts of hemp seeds.
- Hemp Hearts are NOT marijuana, cannabis. The difference between hemp and marijuana is their psychoactive component: THC
- Approximately 40% of Europes hemp is cultivated in France. Other countries are Estonia, Netherlands, Romania, Lithuania and Italy.
- Hemp Hearts are de-shelled, have less fiber, easier to consume and great to use in recipes because they aren’t as hard or crunchy as the seeds.
Recipe
1/2 cup coconut oil - melt
1/4 cup soy or rice milk
2 tsp vanilla extract
1 cup coconut sugar or brown sugar
1 cup hemp seeds - divide
1 cup dark chocolate chips or semi sweet - divide
2 cups gluten free flour - you can also use all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher or course salt
Instructions
preheat oven to 350 degrees
place coconut oil, non dairy milk, vanilla, coconut sugar, 3/4 cup hemp seeds and 1/2 cup chocolate chips in a blender. and puree for 30 seconds or until mixture is creamy
in a large separate bowl whisk the flour, baking powder, baking soda and salt
add the mixture from the blender into the flour mixture and stir until ingredients are totally combined
stir in the other half of the chocolate chips (1/2 cup) and the rest of the hemp seeds (1/4 cup)
drop 1 heaping tbsp of badder on parchment lined baking sheet - or a heaping 1 tbsp
use your palm to gently press cookies down and form into circles
bake for 11 minutes for softer cookies and 13-14 minutes for crisper cookies
