Energizing Mineral Broth

Minerals are super important to our diet. Unlike vitamins, which are produced by plants and animals, minerals come from soil and water. So how do we get our essential minerals? They are first absorbed and eaten by the plants and animals, respectively, that we then consume. We are all part of a grand ecosystem – keep that in mind before you eat – a blessing of gratitude is a nice way to acknowledge how lucky we are to have a universe that feeds us organically from mother nature.

This recipe was inspired by Leslie Nance, a cancer nutrition specialist and author of Become The Boss Of Your Cancer: Your Essential Healing Guide: Cancer is Not Your Destiny.

Recipe 

6 stalks of celery
5 medium carrots
1 leek – chopped
1 onion – quartered
4 cloves garlic – unpeeled and smashed
1 large sweet potato – unpeeled and chopped
5 red potatoes – unpeeled and chopped
2 strips seaweed sheets (kombu, wakame, nori)
2 cups kale – stripped from stems and chopped
½ bunch of parsley
12 cups water

Instructions

  • Add all ingredients to a large stockpot and bring to boil

  • Reduce heat to a simmer, cover and let sit for 1 hour

  • Remove vegetables by pouring soup in a colander over big bowl or another pot in sink

  • Discard vegetables or use in your garden soil

  • Serve your mineral broth warm in a cup (a.k.a. mineral broth tea – the best!)

Genia’s Spoon Me Tips

I love having food in my fridge ready to go – and for a burst of energy and immunity during the colder months, this mineral soup is my liquid gold. This recipe calls for 12 cups of water, but you can always double the recipe to 24 (if you have a large enough pot) and store the soup for later. You can also use this mineral broth in any of your other dishes that calls for water or vegetable broth.

Feel free to add additional herbs and spices for flavor – I use salt, fresh black pepper, and Herbamare® seasoning. You can also add ginger root, turmeric, cinnamon, and coriander. The flavor of this soup is the cook’s to customize!
