Energy Cookies

When we think of cookies, nutrition and energy don’t really come to mind. Well, these cookies below are nutritious and energetic! The ingredients in this recipe are wonderful for immunity, digestion, and a happy mood.

Cinnamon helps stimulate the digestive fire, increase circulation, and regulate blood sugar. 

Cardamom stimulates digestion which helps alleviate gas and bloating. Basically, these cookies are a superfood.

This recipe is inspired by Lauren Gernady, an Ayurvedic Health Counselor at Kripalu Center for Yoga and Health.

Recipe

1 ½ cups whole raw almonds or pumpkin seeds

4 large medjool dates, pitted and roughly chopped

2 tbsp coconut oil

¼ tsp cardamom

½ tsp cinnamon

1 tbsp vanilla extract

¼ tsp salt

1 jar of your favorite jam (or apple butter)

Instructions

  • Preheat oven to 350°

  • Place almonds or pumpkin seeds in a food processor and pulse for several minutes until coarsely chopped

  • Add remaining ingredients and pulse until a sticky dough is formed - if the dough is too crumbly to roll into balls, add more dates to make it stickier (you can also add more nuts, seeds, or oil)

  • Roll dough into 2-inch balls, place on baking sheet using parchment paper

  • Flatten each ball with the palm of your hand

  • Indent the center of each cookie gently with your thumbs to form a well to fill with jam or apple butter after baking

  • Bake for 12-15 minutes, or until cookies are golden brown on the bottom

  • Allow to cool and fill each cookie before serving

  • Makes 1 dozen cookies

Genia’s Spoon Me Tips

These cookies look great and taste delicious with the filling in the center, although you can enjoy these cookies just as much without the filling.

I personally love strawberry jam in the center, but during the high holidays I’ll be decorating my cookies with apple butter. Autumn is the season to enjoy apples, especially if you live where they grow. Nature provides us with the medicine we need in each season. These cookies have quality ingredients. I love surprising my quests when I tell them their dessert has no refined sugar, flour, or dairy. I call that dessert without the guilt.
