French Lentil and Mung Bean Detox Soup

During the colder brrr… months and shorter days soups are a wonderful way to nurture your body especially when they are easy to create. Prep your mis en place to make sure you have all your ingredients ready to go and within minutes you’ll whip up this delicious and calming soup. - it only takes 30 minutes to cook this soup and there’s no chopping veggies - how about that - other than your herbal garnish - win win! Btw, this is a small potted soup - serves 2-3. It’s an easy, delicious and cozy soup. My suggestion to you is to always have your pantry and fridge ready to go.

1/2 cup French lentil - soak for an hour in water
4-5 cups water
2 tbsp. ghee or cooking oil
1/4 tsp hing - asafoetida. - herb
1 tsp cumin
2 tsp corainder
1/2 tsp turmeric
1 cinnamon stick or 1/2 tsp powder
3 cloves or tsp of powder
bay leaf
1 tbsp. freshly grated ginger
1 tbsp lemon juice
1 tsp salt to taste
cilantro or parsley to garnish
1/2 tbsp coconut sugar or monk fruit to sweeten - optional and not necessary unless you have a sweet craving. Be mindful of the sweetener you use.
- wash and soak mung beans and lentils for an hour
- drain the beans
- place in pot and boil with 4. cups of water, once boiled drain the water and discard water
- add all the ingredients except lemon juice and sugar if you are adding that extra ingredient
- boil for 30 minutes - slightly cover pot
- add lemon juice and the optional 1/2 tbsp sugar if you want that sweet flavor
- stir
- garnish with fresh coriander or parsley

Genia’s Tips:
As I mentioned in the recipe - soak your lentils and beans for at least an hour and than rinse. You’ll have a much more comfortable post meal. The soaking deactivates the lectins and sugars so you can enjoy without feeling bloated or gassy during and after you eat.
