Ginger Sweet Potato Bread Loaf

The blend of ingredients makes this a winner recipe in our home. Dangerously delicious! It’s quite the bread/cake loaf to serve on Thanksgiving weekend and throughout the colder months. As I was baking this bread loaf the aroma in my home was off the chart decadent. I’m telling you, this recipe is par excellence - with a cup of tea it’s a double whammy soul tasting delight.

I like to refer to my dishes as plant-based power foods. I’m a Foodie Modifier and experiment with the finest ingredients - always trying to up level recipes. What can I say - I’m a food snob! And to be quite honest with you - it’s simpler, less processed and easy grocery shopping that saves you time because you’ll be focused on the produce section in the stores and not having to go down the many aisles of packaged foods. Go Simple!!!

There are no greens in this recipe, although, there’s spices and sweet potato that will warm your body, please your palette and satiate your sweet tooth during the holidays. When you’re green most of the time you can enjoy a treat that’s mindfully created with nutrition and nature.

Recipe:

Mise En Place - all ingredients in it’s place - this is when cooking/baking is fun!

2 tbsp of ground flax seeds - flax meal
6 tbsp of water - for the flax meal
2 cups gluten-free flour
2/3 cups sugar
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp cinnamon
1 tsp ground cloves
1/2 tsp allspice
1/2 cup coconut oil - melted
1/4 cup maple syrup
1 cup sweet potato puree or pumpkin puree
(if you are using sweet potato bake in advance and mash it into a puree)

-preheat oven to 325 degrees
-prepare loaf pan - grease and sprinkle flour or flax meal over oil
-whisk flax meal and water together and set aside to thicken
-in a large bowl whisk the dry ingredients: flour, coconut, sugar, baking powder, baking soda and all the spices together
-in a smaller bowl mix the wet ingredients: oil, maple syrup, sweet potato, and flax mixture
-pour wet ingredients into dry dry ingredients and mix well
-pour into greased loaf pan
-bake for 50-60 minutes - stick a knife in the center and it should come out clean
