Grain Free Crunchy Coconut Hemp Granola

For those who know me well can share their experiences with my granola tasting hospitality. My family and I have been creating, gobbling and sharing homemade granola for years. It’s that good and fyi, addicting! Beware!

Variety is fun, too! There are so many creative ways to whip up a batch. I mindfully mastered a granola without oats (grain free) with much research and trial and error using less coconut oil, more seeds, and just enough maple syrup to for a subtle sweetness - (we want it just right!) Goldilocks standards!

This new and revised granola is fall and winter cinnamon spiced to warm you up. It’s protein-rich clusters (breaks in pieces to perfecto) made with hemp hearts and coconut flakes makes for a great crunch and nutrition. I love dried dates, although, you might have another favorite dried fruit to add to the mix. And, if you want to go the extra nine yards you can add dried banana chips and/or dried apples for that extra, extra crunch.

Granola

1 cup hemp hearts
1 cup unsweetened dried coconut flakes
3/4 cup pumpkin seeds
1/2 cup sunflower seeds or chia seeds or go crazy and 1/2 cup of each
2 tbsp cinnamon
1 pinch of Himalayan pink salt
1 tsp vanilla
1/4 cup coconut oil - melt
1/4 cup maple syrup
1/2 cup dried fruit: dates or raisons or mango or your fave - diced
optional : 1/3 cup dried banana chips and/or apple chips - brake into pieces for the extra, extra crunch

-preheat oven to 325 degrees
-in bowl combine hemp hearts, coconut, all seeds, cinnamon, and salt and mix
-add all the remaining ingredients and stir well
-spread an even layer of the mixture onto a large parchment-lines baking sheet
-bake for 25 minutes. Check on granola color. Watch it carefully because it browns quickly. You might need less time.
-remove from oven and let it cool completely. It will get crunchier as it cools down.
-when granola is cool. break in clusters. Now you can add your favorite dried fruits.
-enjoy the crunch, subtle sweetness and deliciousness.
