Summer Cobbler Crisp
One of the best (and easiest to prepare) baked desserts to make in the summertime is a fruit cobbler that will excite anyone’s palette.
The summer heat can take a toll on the liver, as the liver is already the hottest organ in the body. It's important to show the liver some love by keeping it cool and refreshed throughout the summer. One way to care for your liver is through your diet with mild, cooling foods such as greens, coconut, berries, apples - some with bitter and astringent tastes.
There is an intention to use every ingredient in this recipe: grated ginger root, arrowroot, and berries each add a healthy component.
Berries are powerful little fruits. Not only are they cleansing and packed with antioxidants, but they have cooling properties perfect for the summer months. This makes berries wonderful for the liver.
In this recipe I use cinnamon spice, which most people associate with the colder months for its warming properties and wintery aroma. However, cinnamon is very beneficial in the summer heat. It can cool your body by regulating blood sugar as it slows down the breakdown of carbohydrates.

Recipe
Filling
5 cups assorted berries, 2 plums
1 tbsp arrowroot
2 tbsp sugar
¼ tsp cinnamon
1 tbsp grated fresh ginger root
Crispy Topping
½ cup old fashioned oats
½ cup flour
1 tbsp sugar
2 tbsp brown sugar
¼ cup butter, ghee, or melted coconut
½ tsp cinnamon
1 tsp vanilla extract
Instructions
Preheat oven to 375 degrees
Toss the berries with the grated ginger root, arrowroot, sugar and cinnamon
Pour the berry mixture into a pie dish, or 8x8 pan
Combine the flour, oats, sugar, brown sugar, cinnamon, and vanilla in a mixing bowl
Melt the butter or oil and add to the dry ingredients
Stir to combine using a fork
Use your fingers to gently sprinkle the crumble topping evenly on top of the mixture
Bake for 40 minutes or until the fruit is cooked and bubbly, and the topping looks brown and crispy
Genia’s Spoon Me Tips
Arrowroot is a root vegetable. Instead of cornstarch I use arrowroot powder. Arrowroot has no taste and a finer texture, unlike cornstarch, which has a slight taste and thicker texture. If you’re making a sauce or stew that calls for cornstarch in its recipes, I highly recommend you use arrowroot. It also relieves and prevents stomach aches.
This recipe is also delicious if you add nectarines and peaches.
