Vegan Pesto Pasta
Everything in moderation! We can all enjoy pasta once in awhile - it’s a beautiful thing! Pasta can also be very grounding for high energy individuals, but too heavy for those wanting to loose weight. Know your body type and goals!

I’m personally not a big pasta eater, but once in while I enjoy a pasta meal made with veggies, herbs and homemade dressing that always pleases my palate and soul. My family thanks me every time I whip out a pasta meal. The recipe below is loaded with fresh herbs and the cutest petite peas. The combo is par excellence!

Pasta can be modified with vegetable swirls. Zucchini is a popular veggie to turn into a pasta dish. You’ll be pleasantly surprised. So, if you’re sensitive to pastas go for the greens. I use a vegetable spiralizer to swirl my vegetables. I love this device. It’s fairly inexpensive, and includes a few different blades to create vegetable shapes for pastas, salads and crudite.
How to keep pasta from sticking when cooking? Add salt and olive oil to the pasta in the pot. Please, add a lot of water to the pot (I’ve experienced that not enough water can cause the pasta to stick), and don’t overcook your pasta - el dente is tastier. Drain the pasta and add your toppings.
Recipe
1 package of vegan tagliatelle pasta - Italian long, flat ribbons
1 package of frozen petite peas
1 bunch of fresh parsley
1 bunch of fresh basil
1/4 bunch of mint leaves
juice from one lemon
1 garlic clove
1/4 cup of raw pine nuts
1/3 cup extra virgin olive oil
1 tsp salt
1/4 cup of water
Instructions
cooking pasta - follow the instructions on the package
in food processor combine all of the ingredients and process to a smooth dressing
place frozen peas in a cooked pan on medium heat and cover with water and boil for 15 minutes or until the peas are ready. Drain water from peas
time to serve this delish dish - in a big deep bowl add pasta, place peas on top of the pasta, put the pesto dressing on top of pasta and peas and stir or toss in gently.
Optional: grind lemon zest on top and drizzle extra virgin olive oil on top. Take a few deep breaths and dig in! Savor each bite and chew well. Enjoy!
