How do you feel about being deceivingly delicious? Well, if you are cool with secretly and magically hiding veggies in your desserts than this is a great recipe. It’s delicious, gorgeous and full of amazing ingredients: flax as a binder instead of using eggs, non-dairy milk to. enjoy if sensitive. to dairy and if you want a dairy free treat after eating a meat dish (kosher alert), zucchini - sneaking in. those healthy greens, dark chocolate - a super happy food without the extra sugar and loaded with minerals.

These muffins are all people friendly. So vegans, nut free, dairy free, oil free, gluten free folks snatch a muffin in bliss.

recipe:

1 tbsp ground flaxseeds - with 3 tbsp water - set aside
1 1/4. cups non-dairy milk - coconut. milk, almond milk (if nut friendly)
2 tsp lemon juice
2 cups gluten free flour - or regular flour (if gluten friendly)
1/2 cup natural sugar - monk-fruit, date sugar or cane sugar
1/4 cup cocoa or cacao powder
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
3 tbsp maple syrup
1 tsp vanilla
1 1/4 cups grated zucchini = 1/2 of a medium or 1 small zucchini
1/4 cup mini dark chocolate chips

- preheat oven to 350 degrees
- prepare muffin tins in a muffin tray - makes 12
- in a bowl combine non-dairy milk and lemon juice. Set aside to create a buttermilk effect
- in another larger bowl combine flour, sugar, cocoa or cacao powder, baking powder, baking soda, and salt
- stir in the flax mixture (remember the flax and water) to the milk and lemon bowl and add the maple syrup and vanilla
- pour the bowl with all the liquid ingredients (milk mixture) into the flour bowl and stir to combine
- fold in the chocolate chips
- fold in the zucchini
- at this point no need to over mix badder
- spoon the batter into the prepared muffin baking pan
- bake for 18-20 minutes. Insert a knife or toothpick into the muffin to check if muffin is baked through enough and if so let them cool down for 5-10 minutes

Genia’s Tips: Depending on how you like your muffins - very moist or dense adjust the timing in the oven. You might need another 5 - 10 minutes for a dryer muffin.

If you want a sweeter muffin - add more sugar. I personally like my muffins less sweet and a smear of butter or ghee on top.
