Recipe
5 medjool dates
1 cup boiling water for dates to re-hydrate
1 apple - macintosh or gala peeled, cored, diced in very small pieces
apples peel - baked and for decor on plate or for snack -optional
1/4-1/2 coconut shreds
1/2 tsp cinnamon
1-2 tbsp juice: pomegranate, apple or grape
pinch of salt
squeeze of lemon for the apples

Instructions

  • place dates in bowl with boiling water and set aside for an hour to soften

  • peel and save the skin for apple peel crisps

  • cut apple in small pieces and squeeze a touch of lemon juice on top of apples

  • discard water - remove pits in dates and place in food processor

  • add coconut, water and juice and blend until pasty

  • place in bowl and add apples and mix well

  • form one inch balls with hands and firm them well. The balls will not be very sticky, although they will hold for presentation

  • enjoy at your seder table on passover

Genia’s Spoon Me Tips

Charoset is a recipe symbolic of the hard work using cement and heavy bricks during the times of slavery as the Jewish people build the pyramids in Egypt. They are still standing today! Construction par excellence!

These truffles are NUT FREE. You can add your favorite nuts (1/2 cup) to this recipe - grind to small pieces - you will have to add more juice to moisten the balls otherwise they will be be too dry.

Do not add the apples to the blender. It will moisten the recipe too much. Hand chop!

Serve these truffles on a matzah board - presentation will be suitable for the occasion.

To make Apple Peel Crisps the peel of apple, place in bowl, add a little water and mix peel in water, sprinkle cinnamon and mix, spread on parchment paper on baking pan and place in oven at 200 degrees for 1-2 hours until crispy.
