Broccoli and Daikon Soup

This Soup is easily digestible and super fast to create and therefore, makes for a great Spring soup when the season calls for lighter food and more outdoor play (less indoor kitchen time).

Spring is a time for new beginnings and releasing stored energy we accumulate in the Winter. Go light, feel bright, go green, feel lean!

Genia’s Spoon Me Tips: Cut down on sweets, heavy meats and grains (brown rice can be heavy. Millet, quinoa, amaranth, and the lighter smaller grains are more digestable) during the warmer seasons. Drink warm water and chew on some grounded ginger root with a splash of lime and sprinkle of salt to get your juices flowing in you gut for happy digestible meals. A great time to chew on ginger is before a meal. Bon-Apetite!


Spring Soup Passover friendly Vegan Nut Free

Serves 4-6

1 cup daikon radish diced
1 sweet potato diced
1 head of broccoli
1 tsp grated ginger root
1 tsp cumin
1 tsp salt - less or more to taste
1/2 ground turmeric
1/4 tsp black pepper
1 tsp olive oil
1 tsp herbamare - herb and veggie blend purchase/homemade: recipe below
1 lime juiced
1 tbsp chopped cilantro of dill for garnish

-In pot combine 5 cups water, daikon, sweet potato, ginger, cumin, salt, turmeric, pepper and olive oil
-bring to boil than reduce heat and cover for 10 minutes
-add broccoli and cook for another 5 minutes - vegetables will be tender
-you can puree the soup in blender or serve as is garnished with cilantro or dill
-serve and enjoy!

Herbamare Herb and Veggie Blend

1/2 cup salt - Himalayan pink salt or sea salt
1/4 cup dried parsley
2 tsp onion powder
2 tsp garlic powder
1 tsp oregano
1 tsp rosemary
1 tsp sage
1 tsp basil
1 tsp celery seed
1 tsp marjoram
1 tsp dried kelp - seaweed - health food store will have in canister shake

-Combine all the ingredients in a food processor until smooth or hand chop - more grassroot - the way I like it! Store in an airtight container. You’ll love this blend. I use herbamare in my soups, grains and salads.
