Watercress, Cauliflower, Leek Soup
Watercress is the green floral little leafy vegetable that is very often unnoticed and I’m speaking from experience. I love my salads but I must say in the past I neglected a lot of natures treasures. although I’ve been enlightened! Knowledge is power! Shining my green love with you now. Watercress is Mother Nature’s delicious multivitamin. It’s loaded with vitamins and minerals - and there’s 18 of them in total which tells me there’s LIFE - CHAI in this veggie: 18 represents life in numerology - gamatria - it’s therefore a spiritual number in Judaism. Does it get better than that! Eat to live! Nature has us covered or shall I say living! You can add them in soups and salads and garnish your burgers (let’s go with veggie burgers my friends) - garnishes that are edibly nutricious, crunchy and delicious!
Dairy-Free Vegan Paleo Nut-Free
1/2 head of cauliflower- separate into florets
2 cups of watercress greens
1 onion finely sliced
1 leek finely sliced
2 tbsp cooking oil: ghee butter, coconut oil, olive oil, etc…
1 tbsp herbamare spice blend
5 cups water
salt
black or white pepper
Garnish
-Dairy free plain yogurt (there are great non-dairy yogurts on the market- find one with low sugar) - swirl through yogurt to create a design using a knife
-a few sprigs of watercress
-fresh black pepper to sprinkle on top
Instructions:
-In a large pot add oil, onion and sauté on low heat until onion sweats - translucent
-season with a sprinkle of salt and pepper
-add leeks, cauliflower and continue to sauté for 5 minutes
-stir in the watercress, herbamare spice and add the water
-bring to boil than cover and simmer for 15 minutes
-when done taste and add more seasoning as desired
-use a blender - I use a vitamix or hand held blender to puree my soups
-garnish with any topping - below are some ideas - get creative!
-serve and enjoy!
