Kitchari - Rice and Lentil Stew

This dish is a classic Ayurvedic recipe customized for the bio individual. Depending on your body: ectomorph, mesamorph, endomorph there are different veggies to add to this meal in a pot.

Example:

  • Ectomorph- sweet potato and mustard greens

  • Mesamorph- kale and squash

  • Endomorph- cauliflower and dandelion greens

I know I’m getting technical. ‘Food is medicine’ (Hippocrates). We are also meant to enjoy our eating experience and relish in all what nature offers us. KITCHARI is a warming dish that you can literally eat for breakfast, lunch and/or dinner. It’s also a highly medicinal recipe BALANCED with protein, carbs, vegetables, spices and herbs with a tad of fat (Itsy bitsy).


Ayurveda is all about bringing balance into our body. It’s a WHOLEistic system that has been practiced for over 5000 years.

Recipe

Serves: 4

Ingredients

  • 1/2 cup yellow split mung dal or red lentils

  • 1 cup basmati rice

  • 1 tbsp sesame oil

  • 1/2 tsp turmeric

  • 1 tbsp freshly grated ginger root

  • 2 bay leaves

  • 21/2 tsp masala

  • 2 tsp salt

  • 2 cups veggies of your choice snd you can combine) kale, sweet potatoes, carrots, zucchini, beets

Garnish: 3 tbsps chopped cilantro, basil, dill or parsley

Process

  • Soak lentils and rice for a few hours in water. Rinse

  • heat oil in 4 quart pot or large pan over low heat

  • add spices and herbs for 30 seconds allow to heat - the aroma will be magnificent

  • add rice and lentils

  • add 4-5 cups of water

  • bring to boil, then cover, reduce heat to low and simmer for 40 minutes. Stir occasionally

  • check if rice and lentils and veggies are soft

  • dish will be a creamy consistency- add water if dry

  • garnish with herbs of choice
