Purim Triangle Cookies

These triangle cookies are a Purim holiday favorite. In The Book Of Esther, the Persian King’s right hand man, Haman, hated the Jews and tried to have them annihilated. The Queen risked her life to plead for her peoples’ safety. The King listened to his Queen Esther, whom he loved so dearly, and allowed the Jews to fight back against the wicked Haman. And ever since Queen Esther has been our hero and savior of the Jewish people.

To honor their victory, the Jews celebrate Purim every year with a large feast, dress up in costume, and boo everytime Haman’s name is mentioned as we retell the story of what happened. We eat yummy foods and one snack in particular, Hamantaschen, which are cookies named and shaped after Haman’s triangular hat.

I always wondered why we would immortalize such a horrible man by eating cookies that bear his memory – so let’s not. I decided to roll with a more original name, my signature Purim Triangle Cookies. They’re certainly more earthy-crunchy than your typical Hamantaschen, anyways.

Recipe

1 cup ground oat flour – can substitute with almond flour

1 tbsp arrowroot powder 

1 tbsp maple syrup

2 tbsp avocado oil

1 egg

¼ tsp salt

1-2 tsp of cardamom – optional

½ cup jam of your choice – separate filling for center of dough

Instructions

  • In a medium-sized bowl, combine all the cookie ingredients until they come together into a soft ball

  • Cover with plastic wrap and refrigerate for 60 minutes

  • Preheat oven to 350 degrees

  • Lay a large piece of plastic wrap over your table or countertop and place the chilled dough on the wrap

  • Cover with another piece of plastic wrap and roll out until the dough is about a ¼-inch thick

  • Remove the plastic wrap and cut the dough into circles using a 4-inch cookie cutter or the bottom of a class cup

  • Carefully transfer the circles on top of parchment paper on a baking sheet

  • In the center of each circle, place ½-1 tsp of jam

  • Carefully, with your fingers, pinch the dough together to form three corners of a triangle – press firmly so that the dough won’t separate while baking

  • Repeat for all dough circles

  • Bake for 8 minutes

  • Cool, then store in a covered jar in the fridge

  • Enjoy – the power of joy far surpasses that of any other emotion!

Genia’s Spoon Me Tips

I like to aim for jams that are sugar-free or have minimal added sugars. Make sure sugar is not the main ingredient when you’re in a jam. (Ba-dum-tss)

Arrowroot is a healthy starch, and its powder (a substitute for cornstarch) is used to create a lighter, fluffier texture in baking. It’s also a wonderful binder and thickener in sauces.

This recipe makes 10-12 triangle cookies, although I suggest you double the recipe – I like to keep the batch smaller so as not to lose control. These triangle cookies are modified to be super simple so that you can enjoy them guilt-free!
