Roasted Root Veggies in Parchment Packet
5 small beets
3 big carrots cut into half moons
2 parsnips
1 fennel bulb
2 tbsp Olive Oil to drizzle over veggies
1/2 tsp salt
Black Pepper - sprinkle
Juice of lime or lemon optional
-Preheat oven to 400 degrees
-Scrub veggies clean - I like to keep the skin on (loads of nutrients in the skin)
-Cut veggies into 2 inch pieces
-Fennel - chop
-mix all veggies in bowl and -sprinkle seasoning and lime - optional
-drizzle oil on top and mix
-place in center of parchment paper on counter and pleat the edges to close the parchment up. The veggies are inside the parchment packet now
-place in baking tray or baking dish
-roast for 35-45 minutes. The parchment will puff up
-let it sit for a few minutes and than create an X on top with knife to open parchment packet. Be careful with the heated steam.
