Sweet Potato and Buckwheat

Kale and Sweet Potatoes creates a gorgeous color on your plate. Sautéing kale makes this green leafy vegetable more digestible. Sweet potatoes satiates a sweet tooth. Win win! A duo dynamo!

4 cups water 💧
2 cups buckwheat
1/4 cup Olive oil or vegetable broth
2 sweet potatoes 🍠 chopped small pieces
2 cups kale chopped
1 tsp salt
1/3 cup fresh basil 🥬
1 tsp cilantro
1 tbsp lemon 🍋 juice

- Cook the buckwheat in pot
- Sauté all seasoning and veggies in large pan with oil or broth
- Add water bring to boil and simmer for 20 minutes
- Add cooked buckwheat
- Squeeze lemon juice on top of dish
